You do know some. Pen and paper, face to face speech, even chipping letters into rocks, are some non-digital means of communication. There are also new means of networking arising like LoRa, BLE, and Reticulum. Some of these are digital, but are not owned or surveilled by the overlords because they aren't in wide enough use, or are not their property. More is coming.

RTFM (Read the Fine Manual). LoRa and BLE are mesh network protocols using short range radio communications that enable the IOT devices to report surveillance data on consumers to the manufacturers, but can also be used by others to create mesh networks owned by the users, who own the devices themselves, rather than using internet backbones owned by corporations, meaning that corporations can't censor them because they don't own their devices. Reticulum is a novel radio mesh network communications protocol that enables much longer range, but similarly using devices owned by the users, and immune to corporate censorship.

LoRa and BLE are communication protocols that are used in the IoT 'smart' device technology. If you are a programmer of such devices I would expect you to be familiar with them. If you're not I would not be surprised you were unfamiliar with them. Reticulum is a new radio mesh network being developed to enable communications between individuals without depending on communication infrastructure owned by corporations, that those corporations can control how people communicate.
